Castelbuono
Manna, considered "the nectar of the gods", is the white gold of the Madonie. It is a crystallized and sugary sap that is extracted from the spring season from the ash tree, today Presidio Slow Food. This ash sap, from the many properties, is harvested exclusively in the countryside of Castelbuono. There we will meet on the field Mario, a young manna producer, who will explain and show the different techniques of extraction and collection. Between historical and anecdotes, it will also illustrate the various uses of manna, deepening its benefits from medicine to cosmetics or pastries. A unique experience that will immerse yourself in this tradition, now almost disappeared in the rest of southern Italy, which survives thanks to very few enthusiasts.
